Under the direction of Executive Chef Andrea Quagliarella, menus include both Tuscan regional specialities and Mediterranean specialities, thus offering a broad daily choice. The sommeliers have chosen 300 labels among those best representing the Italian wine culture, with a special focus on Tuscan wines. Utmost care is given to procuring foodstuff of prime quality, with a preference for local and organic products.
